Banana Caramel Goodness

I was lost for a dessert one night so combined a few items and came up with this. Now this isn't the most enticing photo in the world, but I tell you, it sure was delicious - if you like banana and caramel. Firstly, peel 2 bananas and lightly dust them with icing sugar. Then cut 2 strips of puff pastry and wrap them around the banana. Lightly dust with icing sugar and put them in the oven (200 degrees) for about 20 minutes. With my oven, it took 18 minutes.

For the caramel sauce, simply add 50g of butter, half a cup of brown sugar and half a cup of cream to a saucepan. Keep stirring on a medium heat until it starts to bubble (about 5 minutes?) and turn a light golden colour. Pour over ice cream.

Add all items together in a bowl and enjoy!

Gooey Southern Squares


This is the most delicious (and fattening!) slice recipe I've tried in a long time... Gooey Southern Squares. They are every bit as gooey as they sound.

Ingredients:
Gooey Southern Squares
2 cups digestive cookies (about 20)
1 cup unsalted butter, melted
1 cup salt roasted peanuts
1 1/2 cups white chocolate chips
1 cup unsweetened flaked coconut, lightly toasted
2 x 14-ounce tins condensed milk

Directions:

Preheat oven to 325 °F and grease a 9-inch square pan. Line pan with parchment so paper overhangs on two sides (this allows you to pull out squares easily for slicing).
For base, pulse digestive cookies in a food processor until a fine crumb. Toss with melted butter to combine and press into prepared pan. Sprinkle peanuts over base. Sprinkle chocolate chips over peanuts then top with toasted coconut. Pour condensed milk over coconut and spread gently. Bake for 325 °F for 55 to 65 minutes, until condensed milk is bubbling and a golden brown. Allow to cool completely (about 3 hours) before slicing.
Store Gooey Southern Squares in an airtight container for up to a week.
